For the Mint Syrup:
- 1 cup water
- ½ cup caster sugar superfine sugar
- 1 cup fresh mint leaves and stems
For Each Mocktail:
- ½ cup premium ginger ale or non-alcoholic bourbon
- Crushed ice enough to fill glasses
- Fresh mint sprigs for garnish
To make the mint syrup, combine 1 cup water and ½ cup sugar in a saucepan over medium heat and stir until the sugar dissolves completely. Add 1 cup fresh mint, bring to a gentle boil, then reduce heat to low, cover, and simmer for 10 minutes. Remove from heat, keep covered, and let cool completely before straining into a container.
To make your mocktail, fill your glass or julep cup all the way to the top with crushed ice, making a small dome on top. Pour in ½ cup ginger ale or non-alcoholic bourbon, then add ¼ cup of your prepared mint syrup.
Stir everything together gently with a spoon, being careful not to melt too much ice. You just want the ingredients to mix a little bit.
Take a fresh mint sprig, gently clap it between your hands to release the aroma, and place it in your drink as a garnish.
