- 2 cups fresh strawberries hulled and sliced (approximately 1 pound or 450g)
- ½ cup granulated sugar or monkfruit sweetener adjust to taste based on strawberry sweetness
- 4 cups filtered water divided
- 3-4 tablespoons fresh lime juice from approximately 2 medium limes
- 1 lime sliced into wheels for garnish
- Few sprigs of fresh mint for garnish
- Ice cubes for serving
Mix sliced strawberries, sugar (or sweetener) and 1 cup of water in a bowl. Cover and refrigerate for 4 hours to let the strawberries soften and release their flavor.
After refrigerating, pour everything into a blender and blend until smooth. Then strain this mixture through a fine mesh strainer into a pitcher, pressing gently with a spoon to get all the liquid out.
Add the remaining 3 cups of water to the pitcher and stir well. Then add fresh lime juice to taste (about 3-4 tablespoons) and stir again.
Serve immediately over ice or keep in the refrigerator until ready to use. When serving, garnish each glass with a lime wheel and mint sprig for extra freshness.
For the best flavor, give the drink a quick stir before pouring as natural separation might occur.
